GRINCH DEVILED EGGS
These green deviled eggs are made with spinach then garnished with red pimentos for a fun and festive Christmas appetizer. We call them Grinch Deviled Eggs.
GREEN DEVILED EGGS
Deviled eggs are one of my favorite holiday appetizers because they are so easy to make and can be made in so many looks and flavor combinations. Not only does the spinach and pimentos give these deviled eggs their festive Christmas colors, they add flavor too.

GRINCH DEVILED EGGS
These green deviled eggs are made with spinach then garnished with red pimentos for a fun and festive Christmas appetizer. We call them Grinch Deviled Eggs.
Ingredients
- 8 Large Hard Boiled Eggs
- 2 Cups Baby Spinach
- 3-4 Tablespoons Mayonnaise
- 1/2 teaspoon Mustard, (optional)
- Salt/Pepper To Taste
- Diced Pimentos
Instructions
- My preferred method for hard boiled eggs:
Place eggs in a 3 quart pot filled with cold water. Bring the water to a boil, cover, remove from heat and let sit for 11 minutes. Run eggs under cold water until fully chilled. Peel. - Slice eggs in half, lengthwise. Transfer yolks to food processor. Discard two whole egg whites leaving 12 deviled eggs total.
- Add spinach, mayo and mustard to yolks. Process or use handheld blender until mixture is smooth. Start with 3 TB mayo then add more if needed. Salt and pepper to taste.
- Transfer yolk mixture to ziplock bag. Cut the bottom corner off of bag and pipe filling into egg whites.
- Top each egg with 4-5 diced pimentos.
- Refrigerate until ready to serve.
Notes
Less spinach can be used if preferred.
